Chickpea Burgers

Ingredients:
Burger Mix
• 2 cups Yupik Organic Chickpeas, cooked and drained
• ¼ cup Yupik Organic Diced Sun-dried Tomatoes
• ¼ cup chickpea flour
• ½ cup quick oats
• 1 tsp cumin
• 1 tsp ground coriander
• 1 tsp dried oregano
• ¼ fresh flat-leaf parsley
• ½ cup feta cheese
• 2 tbsp extra-virgin olive oil
Burger Toppings
• 6 gluten-free burger buns
• 6 tbsp hummus
• 1 cup arugula
• ½ cup red onion, finely sliced
• 6 tsp mayonnaise
• Dill pickles, sliced
Method:
1. Preheat oven to 365 °F.
2. In a food processor, pulse all the ingredients of the burger mix until evenly combined. Shape into 6 patties.
3. Place the patties on a parchment-lined baking sheet and bake for about 15 to 20 minutes, until golden brown.
4. Lightly toast the buns. Garnish each bottom half with hummus, red onion, and dill pickles. Add a patty and finish with arugula, mayonnaise, and the top bun.
