Ingredients:

• 1 cup Yupik Organic 70% Dark Chocolate Wafers, melted
• ¼ cup Yupik Organic Toasted Coconut Smiles, chopped
• 2 tbsp Yupik Raw Pistachio Kernels, chopped
• 1 tbsp Yupik Birthday Cake Topping
• 2 cups organic dessert tofu, room temperature
• 16 tbsp coconut milk yogurt, for topping
• ¼ cup Yupik Organic 70% Dark Chocolate Chia Seeds, for topping
• 1 tbsp Yupik Organic Cocoa Powder, for topping

Method:

1. Whisk the dessert tofu while pouring melted chocolate into the mixture with a steady stream. Mix until the tofu looks glossy and thickens slightly.
2. Mix the pudding with pistachio kernels, birthday cake topping and coconut smiles.
3. Portion the pudding into 8 glass ramekins.
4. Let rest in the fridge until set.
5. Before serving, garnish each portion with 2 tbsp coconut milk yogurt and a generous sprinkling of dark chocolate chia seeds and light dusting of cocoa powder.
