Pineapple Fried Rice

Ingredients:

  • 1 ½ cups Yupik Organic White Jasmine Rice, cooked
  • ½ cup Yupik Organic Dry-Roasted Unsalted Cashews
  • ½ cup seitan, diced
  • 2 eggs
  • 1 cup fresh pineapple, diced
  • ½ cup onion, diced
  • 2 green onions, chopped
  • 3 tbsp vegetable oil
  • 1 ¼ tsp curry powder
  • 2 tsp soy sauce
  • 2 tsp fish sauce
  • 1 ½ tsp shrimp paste
  • 1 ½ tsp Yupik Organic Cane Sugar
  • ½ tsp Yupik Ground White Pepper
  • ¼ tsp Yupik Sea Salt

 

Method:

  1. Pour the vegetable oil in a wok and heat at medium-high heat. Sear the seitan and put aside.
  2. Crack the eggs in the wok and scramble until mostly cooked. Mix in the cooked rice, onion, seitan, and all seasonings. Stir until well distributed. Incorporate pineapple. Let rice toast while flipping occasionally.
  3. Take the wok off the heat and add the cashews and the green onion. Plate and enjoy.
