HOW TO USE MILLET: All about texture!

Millet, like most grains, should be thoroughly rinsed before cooking. For a classic preparation, cook 1 cup of millet with 1 ½ cups of water (or stock) for 20 minutes, or until all the water is absorbed. Use this classic recipe to create side dishes and salads, or add to soups and stews.

For lighter, fluffier millet, cook the grains with a half cup less of water. This pilaf-style millet can also be served in the same ways as the classic preparation. It also makes a delicious bed for roasted, grilled, or braised vegetables, meat, fish, etc.

For denser, creamier millet, use half a cup to a whole cup more of water to achieve a polenta-like texture. Creamy millet can be served as hot cereal, paired with honey, cinnamon, and nuts. It can also be used as a carrier for other flavors, such as sugar (for a dessert-like pudding) or salt (for savory applications).
