Pine nuts come from pine cones! Patience is a virtue... the harvesting process is a long and careful procedure. Pine cones are harvested 10 days before the green cone begins to open. Then the cones are dried in the sun for 20 days. The cones are then smashed and the small seeds are separated by hand. It’s no wonder pine nuts are considered a luxury nut!
