Yupik’s wild long rice is grown in shallow water. Despite its name, it’s not technically rice at all! Wild rice is the seed of aquatic grass. It absorbs water very slowly, so its cooking time is quite long, but its earthy flavour and chewy texture make it worth the wait!

CULINARY TWIST

To cook wild long rice, simmer 4 cups of liquid for every 1 cup of rice. Cook for 45 to 60 minutes, until tender and chewy (or desired texture). Wild long rice can be used in soups, salads, as a side dish, or in holiday stuffings. It can even be popped like popcorn!
