Ingredients:
Salad
- 3 zucchinis, sliced and lightly grilled
- 4 cups fresh arugula
- ¼ cup beet microgreens
- ½ cup Yupik Organic Raw Hazelnuts, roasted and peeled
Dressing
- 1 tsp dried oregano
- 1 garlic clove
- 1 lemon, juice and zest
- ⅛ tsp cayenne pepper
- ½ tsp salt
- ¼ cup olive oil
Method:
Emulsify all dressing ingredients with a bowl and a whisk. Mix the dressing and remaining ingredients in a serving bowl and enjoy.
