Mix it with 1 quarter cup edamame beans, half cup cooked quinoa, 1 green onion chopped in small pieces. For the dressing, in a small bowl, whisk 1 red bell pepper, 2 tablespoons minced fresh cilantro, 1/2 tablespoons freshly squeezed lemon juice, 1/2 teaspoon chili powder, 1/2 teaspoon dried thyme, salt and pepper to taste and cayenne until well combined.
