Black Bean Burritos

Black Bean Burritos

Servings: 4 (2 burritos per serving)

 

Ingredients:

  • 2 cups Yupik Organic Black Turtle Beans, cooked
  • 1 cup Yupik Organic Dark-Red Kidney Beans, cooked
  • 8 8-inch flour tortillas, grilled
  • 1 795 g can tomatoes
  • 1 cup vegetarian chicken stock
  • ¼ cup extra-virgin olive oil
  • 2 tbsp Mexican chili powder
  • 2 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1 tsp ground coriander seeds
  • ½ tsp ground cinnamon
  • 1 tsp chili flakes
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 2 tsp Yupik Mediterranean Sea Salt
  • ½ tsp Yupik Ground Black Pepper
  • Green onions, chopped, for garnish
  • Fresh lime juice, for garnish

 

Method:

  1. Add all ingredients, except the garnishes and the tortillas, to a skillet. Cook on medium-low heat for 90 minutes. Allow to cool completely.
  2. Spread out the bean mixture across the 8 tortillas.
  3. Top with chopped green onions and fresh lime juice. Roll the burritos and serve.
