Servings: 4 (2 burritos per serving)
Ingredients:
- 2 cups Yupik Organic Black Turtle Beans, cooked
- 1 cup Yupik Organic Dark-Red Kidney Beans, cooked
- 8 8-inch flour tortillas, grilled
- 1 795 g can tomatoes
- 1 cup vegetarian chicken stock
- ¼ cup extra-virgin olive oil
- 2 tbsp Mexican chili powder
- 2 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tsp ground coriander seeds
- ½ tsp ground cinnamon
- 1 tsp chili flakes
- 1 tbsp onion powder
- 1 tsp garlic powder
- 2 tsp Yupik Mediterranean Sea Salt
- ½ tsp Yupik Ground Black Pepper
- Green onions, chopped, for garnish
- Fresh lime juice, for garnish
Method:
- Add all ingredients, except the garnishes and the tortillas, to a skillet. Cook on medium-low heat for 90 minutes. Allow to cool completely.
- Spread out the bean mixture across the 8 tortillas.
- Top with chopped green onions and fresh lime juice. Roll the burritos and serve.
