Ingredients:
- ⅔ cup Yupik Blanched Extra-Thin Sliced Almonds
- ⅓ cup Yupik Thompson Raisins
- ⅔ cup Yupik Organic Cane Sugar
- ¼ cup honey
- ¼ cup heavy cream
- ½ cup Yupik Semi-sweet Chocolate Wafers
Method:
- Preheat the oven to 340 °F. Line a cookie sheet with parchment paper.
- In a small saucepan, heat honey, cream, and sugar. Simmer for about 5 minutes, but do not let turn brown. Remove from the heat and add the raisins and the almonds. Stir until coated.
- Place 1 teaspoon of the mixture onto the lined cookie sheet. Bake for 5 to 10 minutes, until golden. Cool completely.
- Melt the chocolate in the microwave. Mix every 20 seconds, until smooth. Dip the bottom of each florentine in the melted chocolate. Let rest upside-down to allow the chocolate to set.
