Chocolate and Raisin Florentines

Ingredients:

  • ⅔ cup Yupik Blanched Extra-Thin Sliced Almonds
  • ⅓ cup Yupik Thompson Raisins
  • ⅔ cup Yupik Organic Cane Sugar
  • ¼ cup honey
  • ¼ cup heavy cream
  • ½ cup Yupik Semi-sweet Chocolate Wafers

 

Method:

  1. Preheat the oven to 340 °F. Line a cookie sheet with parchment paper.
  2. In a small saucepan, heat honey, cream, and sugar. Simmer for about 5 minutes, but do not let turn brown. Remove from the heat and add the raisins and the almonds. Stir until coated.
  3. Place 1 teaspoon of the mixture onto the lined cookie sheet. Bake for 5 to 10 minutes, until golden. Cool completely.
  4. Melt the chocolate in the microwave. Mix every 20 seconds, until smooth. Dip the bottom of each florentine in the melted chocolate. Let rest upside-down to allow the chocolate to set.
