Feta Quinoa Salad
Servings: 4
Ingredients:
• 2 cups Yupik Organic White Quinoa Royal, cooked and cooled
• 1 cup Yupik Organic Dark Red Kidney Beans, cooked and cooled
• 1 tbsp Yupik Shelled Roasted Unsalted Sunflower Seeds
• ¼ cup Yupik Dry Roasted Unsalted Pistachio Kernels
• ½ cup feta cheese, dried with a paper towel and diced
• ¼ cup corn kernels
• ½ cup basil leaves, chiffonade
• ½ cup red bell pepper, seeded and diced
• 2 tbsp olive oil
• 1 lime, garnish
Method:
1. Toss all the ingredients, except the lime and part of the basil.
2. Garnish with remaining basil and serve with lime quarters on the side.
