Grilled Zucchini Salad

Ingredients:

 

Salad

  • 3 zucchinis, sliced and lightly grilled
  • 4 cups fresh arugula
  • ¼ cup beet microgreens
  • ½ cup Yupik Organic Raw Hazelnuts, roasted and peeled

 

Dressing

  • 1 tsp dried oregano
  • 1 garlic clove
  • 1 lemon, juice and zest
  • ⅛ tsp cayenne pepper
  • ½ tsp salt
  • ¼ cup olive oil

 

Method:

Emulsify all dressing ingredients with a bowl and a whisk. Mix the dressing and remaining ingredients in a serving bowl and enjoy.
