Ingredients:

 

Poke Bowl

  • 285 grams sashimi-grade salmon, frozen and thawed
  • ¾ cup Yupik Organic Basmati Rice, cooked
  • ¼ cup Yupik Organic Tamari Almonds
  • 1 avocado, sliced
  • 1 cup cucumber, peeled and sliced
  • ½ cup carrot, julienne

 

Marinade

  • ½ tsp Yupik Organic Hulled Sesame Seeds
  • ½ tsp Yupik Organic Black Sesame Seeds
  • 1 ½ tbsp mirin
  • 2 tbsp light soy sauce
  • ½ tsp red chili flakes
  • 1 lime, juice and zest

 

Method:

 

  1. Combine the diced salmon, carrots, and cucumber with the marinade. Refrigerate for 45 minutes.
  2. In 2 serving bowls, spoon in the basmati rice. Place the sliced avocado in the center of the bowl and add the marinated vegetables and salmon.
  3. Garnish with leftover marinade and tamari almonds.
