Spiced Chickpea and Squash Salad

Spiced Chickpea & Squash Salad

Servings: 4

Ingredients:

• ¾ cup Yupik Golden Roasted Chickpeas
• 1 butternut squash, cleaned and sliced
• 2 tbsp olive oil
• ½ tsp salt
• 1 pinch black pepper
• 1 tsp cumin
• 1 tbsp paprika
• ½ tsp coriander
• 1 tsp onion powder
• 2 cups arugula
• 1 cup radicchio, cleaned and roughly chopped
• 1 lemon, cut into segments

Method:

1. Toss the chickpeas and butternut squash with olive oil, herbs and spices. Place on a baking sheet and roast in an oven at 275 °F for 45 minutes, or until the squash is soft and aromatic.
2. Transfer the contents of the baking sheet to a large mixing bowl and toss in the chopped radicchio.
3. Serve on a platter garnished with arugula and lemon segments.
