Split Lentil Soup

Servings: 4

Ingredients:

• ¼ cup Yupik Basmati Rice, cooked
• 1 cup Yupik Organic Yellow Split Lentils
• 1 ½ tbsp Yupik Chicken Soup Base
• 4 cups water
• 1 bunch flat leaf parsley, chopped
• ½ cup carrot, diced
• 1 cup onion, diced
• 1 garlic clove, crushed
• ¼ cup red bell pepper, seeded and diced
• 2 tbsp olive oil
• 1 tbsp paprika
• 1 pinch Yupik Ground Black Pepper
• ½ tsp Yupik Himalayan Pink Salt, to taste (optional)

Method:

1. Pan fry onions, carrots, bell peppers and garlic with olive oil and black pepper.
2. Once the onions are translucent, add soup base, lentils, and water.
3. Add rice and paprika.
4. Cook until the soup thickens and taste to check seasoning.
5. Serve and garnish each bowl with parsley.
