CACAO & JACKFRUIT ENERGY BOMBS

Ingredients for 16 balls - Prep time: 50 minutes

  • 3 tablespoons finely chopped dried jackfruit

  • 1 Large medjool date optional - skip to keep keto

  • ½ cup shredded unsweetened coconut 

  • 2 tablespoons brown flax seeds 

  • 1½ cups raw cashews 

  • 2 tablespoons cacao powder 

  • 3 tablespoons cacao nibs

  • ¼ cup coconut oil 

  • ¼ cup creamy cashew butter 

  • 2 tablespoons hemp seeds 

  • ½ teaspoon himalayan fine pink salt

PREPARATION: In the bowl of a food processor or high-powered blender, combine all of the ingredients except for cocoa nibs. Pulse for 1-2 minutes, until the cashews begin to break down along with the other ingredients.The mixture will become grainy at first. Keep processing until the oils start to release from the nuts and the mixture sticks together. Add cacao nibs and pulse until just combined. Use a tablespoon to divide the mixture into 16 equal pieces and with clean hands roll into balls. Place on a plate for 30 minutes in a refrigerator to allow the Cacao & Jackfruit Energy Bombs to firm up.

BONUS TIP: If your mixture seems too dry, you may need the extra tablespoon of cashew butter to help it come together.

Jackfruit is the largest tree-born fruit in the world: it can reach up to 120 pounds and over 35 inches long. Jackfruit has a sweet and fruity aroma. Once a jackfruit is cracked open, you can find pods or bulbs. These are also called seeds or pits, and are round and dark in colour, similar to chestnuts.

HOW TO STORE JACKFRUIT: Preserve its freshness!

Store dried jackfruit slices in a cool, dry place for up to 12 months. They can be refrigerated to extend shelf life.
