I. FRUITY PROTEIN BARS - perfect for super busy mornings
For 6 bars, in a large bowl, combine 1½ cups rolled oats, 1 tbsp sunflower seed protein powder, ¼ cup ground flax seed, 1 tsp baking powder, 1 tsp cinnamon powder. In another bowl stir in a beaten egg and ¼ cup coconut sugar, 1½ cups unsweetened almond milk. Then, pour them in the other bowl and stir until well combined. Fold in ¼ cup Sultana raisins, ¼ cup chopped pitted dates. Line a 9x5 inch baking pan with parchment paper. Bake for about 25 - 30 minutes at 375°F and enjoy or freeze for later.
II. CARROT CAKE PROTEIN LOAF to satisfy your sweet tooth - Microwavable
This is a nutritious snack to eat on-the-go you can make ahead in less than 15 minutes.
Grease a bread pan with cooking spray. In a medium bowl, combine ½ cup grated carrots, 1 tsp orange zest, ½ cup almond milk, ⅓ cup apple compote, 1 tsp cinnamon powder, stevia and salt to taste . Stir in 1½ tbsp sunflower seed protein powder and ½ cup quinoa flakes. Pour the batter into the pan, tap to flatten the top, microwave for 6 minutes and... that's it, that's all!
